Strawberry & Ricotta Crostinis. A healthy appetizer that will please any crowd | fit, fun & delish! Happy First of July peeps! Half a year has gone by but it feels like I just put my Xmas tree away and now it’s almost Fourth of July! I do hope the next three months go by faster though. As the rest of the country celebrates the beauty of Summer, July, August & September is when Phoenicians go into hibernation in order to survive the 110+ degree weather. Can you believe some people like these scorching hot days? Yep! I heard that from multiple sources. However, after so many years of resenting the heat, I’m starting to be thankful for the place I live…. after seeing the news about tornados, hurricanes, floods, severe winters, etc. I do prefer the heat over any of those natural disasters! No way I want to live thru one of those! Since we’re speaking of summer, how about these epic summer Crostinis? I think these Strawberries Crostinis should be on your Fourth of July menu. They would make a perfect appetizer for a group or even just to treat yourself.Strawberry & Ricotta Crostinis. A healthy appetizer that will please any crowd | fit, fun & delish! I’m convinced that “honey & ricotta” are the other “peanut butter & jelly” of this world. This combinations makes the perfect base for any kind of crostini. HERE is another crostini recipe I made about two years ago.  I still love it as much as I did then.Strawberry & Ricotta Crostinis. A healthy appetizer that will please any crowd | fit, fun & delish!

Strawberry & Ricotta Crostinis

Ingredients
  • 1 Baguette, cut in ½-inch thick slices
  • 2 tablespoons extra virgin olive oil
  • ¾ cup strawberries, chopped
  • 1½ teaspoon balsamic vinegar
  • 2 teaspoons fresh mint, chopped
  • ¾ cup ricotta
  • 1 tablespoon honey
  • ½ teaspoon kosher salt
Instructions
  1. Set an oven rack 4 inches from the broiler heat source. Preheat the broiler on high.
  2. Arrange the bread in a single layer on a broiler pan. Brush the bread with the oil on the side up.
  3. Broil until golden, about 1 minute. Keep an eye on it since it broils fast.
  4. In a small bowl combine the strawberries, balsamic vinegar & fresh mint. Set aside
  5. In a small bowl combine the ricotta, honey and salt.
  6. Spread the ricotta mixture on the crostini and top with the strawberry mixture.

  • Honey and ricotta are a fantastic combination! Those crostini look beautiful, I love the strawberries. I also concur…I don’t know how people deal with that crazy heat. My husbands family is in Phoenix, but the head to the mountains to stay cool in the summer. I’m from Texas and it gets crazy hot and humid there. You count the months until the cool weather returns.ReplyCancel
